Easter, St. Patrick's Day, Christmas, Birthday or Any Day Cupcakes

The Bottom Line Special occasion or not, these cupcakes are always in demand around here!

You wouldn't think a simple cupcake would create such an uproarious demand for encores. This one does. My grandmother had this recipe written in one of her cookbooks and she made them for about 15 to 20 years. When she passed on, my mother and I took up the torch.

Lay's Potato Chips touts "No one can eat just one". Well, these cupcakes fall into that category. Our family and friends have their sniffers tuned to the smell of these gems and if they get a whiff of them, we wisely stand back because the stampede is about to begin. There's an overall flurry of activity and ultimately all that's left behind are mere crumbs of what once was a double batch. Thank goodness they aren't difficult to make or too time consuming.

If you need an excellent cupcake recipe this one is certainly worth a go. Just make one batch and see if they last very long...

Pistachio Cupcakes

Makes 18 cupcakes

1-3/4 cups all-purpose flour
1/2 cup cooking oil
1 4-serving-size package Instant pistachio pudding mix
1 teaspoon vanilla or 1/4 teaspoon almond extract
3/4 cup miniature chocolate pieces
2/3 cup sugar
2-1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs - beaten
1-1/4 cups milk

1 can cream cheese frosting
Green colored sugar

Grease muffin cups or line with paper bake cups.
In a large mixing bowl, stir together flour, pudding mix, chocolate pieces, sugar, baking powder and salt.
In a small bowl, combine beaten eggs, milk, oil and vanilla (or almond extract). Stir into flour mixture, just till combined.

Fill muffin cups 2/3 full.

Bake at 375 degrees F. for 18 to 20 minutes, or until golden brown.

Cool on a wire rack.

Frost with cream cheese frosting; sprinkle with green sugar.

We normally top 'em with the Cream Cheese frosting then use the colored sugar sprinkles from the grocery store. Interestingly though, this year my mother found some purple and green "sparkles" by Wilton that she's using for our Easter cupcakes. They will be beautiful for the few moments we see them dolled up. No doubt the masses will once again assemble upon detecting the aroma.

These are good for any occasion. We've made them for Christmas, St. Patrick's Day, Easter and for birthdays. It's become tradition now. I hope it does with you as well!
