What is dessert? Sweet Potato Pie! My secret recipe!

The Bottom Line Wonderful, fattening foods that we all love to eat! Be careful though, because you are what you eat!
What is dessert? Well let me tell you what I think dessert is!
It’s that wonderful, sometimes colorful, sweet smelling, sometimes fattening, concoction that we humans love to eat and eat! And the absolute wonderful taste of some desserts will just make you feel that you are putting the pounds on just by thinking of them! Of course we all know that is simply not true but sure seems like it sometimes though.
Now I don’t eat a lot of dessert and not just because they are fattening, I just don’t. I have to be in the mood for them. However there are times when I am around desserts that, that is all I want! Some people live for desserts. Take kids for example, they always want the dessert first before the meal. Which we as parents have to fight them off and tell them know and actually bribe them to eat “real” food first and then they can have dessert.
For those of you who read my review on my recipe for Banana Pudding, first of all thank you and I do hope you enjoy yours when you make it. Well here is another favorite of mine that is in demand very often. Sometimes during the holidays I make a lot of them, even sell them! (I get 6.00 a pie!) My father loves my sweet potato pie! My son who is now seven begs me to make him one. (Which I do.)
Sweet Potato Pie! Now some people don’t care for this pie because the thought of sweet potato’s can be nauseating to them. The way I fix it you can’t even tell it’s made with sweet potatoes. It’s all how you prepare them. And being from the South I am expected to know how to make them…Lol.
The Recipe
Sweet Potato Pie
1½ cups sugar
3 eggs
2 to 4 sweet potatoes (depending on size, I look for medium size potatoes.)
1 tsp. Vanilla
1 stick of butter, melted
½ to ¾ cup milk
2 deep 9” pie shell (unbaked)
Now the day before I am going to make the pies I buy the sweet potatoes and bake them. Yes I said bake! Most people boil them. Well not me! The true taste is in the baking of the potatoes. I take each potato and butter them or coat in a light oil, wrap in tinfoil and slow cook all night on 200 degrees. The butter/oil will allow for the peel to come off easier and also gives the potato a better flavor. You can even store the potato in the refrigerator for a couple of days during the holiday season until you are ready to use them and they will be fine. I also keep a can of sweet potatoes just in case I need them. However, I do not like to because they are not the same!
Now before putting everything together I peel then slice the potatoes and put aside on a plate. Also keep in mind that the more potato the better the pie. But don’t go overboard. You will have to use your judgment in selecting the potatoes when you are buying them. As you may know sweet potatoes come in funny shapes and sizes.
I then put the milk, sugar, eggs, vanilla flavoring and butter together in a mixing bowl. I mix them with my electric mixer for about 3 minutes. I then add the sweet potatoes while the mixer is running. Mix really well. There may be some lumps but that’s okay.
I then put the mixture into two 9” deep pie shell (unbaked) and bake for 1 hour at 350.
When done the pie shell will be slightly brown around the edges and the pies will be just a little brown on across the top, but not much.
You can also get 4 shallow pie shells and make 4 pies with the same mixture. You can find the pie shells in the freezer section at your local grocery store.
Let the pies cool and enjoy! Goes great with a good cup of coffee of a glass of milk.
You can store the pies in the refrigerator, which is perfectly okay to do so. Some people like them cold. You can also store in a pie container or just cover with tin foil. It is also okay to make the pies up 2 to 3 days before you are ready to serve. Some people think that the pies “age” and taste better. I don’t know about that. My pies are not generally around that long.
Some people top their sweet potato pie with whipped cream or other toppings.
