The Bottom Line To find a substitute for sugar without calories that you can use for cooking and baking is a great find. It tastes great as well.
Since I am always on the lookout for a good diet product that taste great and is good for you, we now have SPLENDA. I first read about this on a review by MsHooterville’s last March 14th. She wrote such a great review I had to check this out at our grocery store and sure enough there it was, both in the granular and packet boxes. So I bought both and have had a great time experimenting with this product.
EQUAL OUT DATED
Since the first time I tasted Equal I thought this was a miracle substitute for sugar, but then you start reading about aspartame and how it can be harmful. Of course all the diet programs want you to eliminate sugar in your diet it seemed like a never ending battle to control your diet and stay healthy. Of course while using Equal you could never cook or bake with it. Along comes this new product SPLENDA what you can use just like sugar and is made from MALTOEXTRIN AND SUCRALOSE. It is measured just like sugar, teaspoon for teaspoon and cup for cup.
SPLENDA WEB SITE
I checked out their web site called www.splenda.com and printed out much of their information and a few of their recipes. Their web site states that SPENDA is the only no calorie sweetener that is made from sugar, so it tastes like sugar. It tells us that there is no aftertaste as with some other sweeteners. Since many of us and me included gained a few pounds over the holidays. This was a great discovery as it is always harder to take those pounds off the older one gets. I was ripe for this new product and anxious to give it a try. The web site also included information and how to shave calories and cut pounds painlessly, useful advice for everyone.
The interesting section on this web site is their tips for cooking and baking. They explained that you have to make a few changes in your recipes if you substitute SPLENDA for sugar. By using the granular SPLENDA in your cake recipes for every one-cup SPLENDA add sifted ½ cup nonfat dry milk powder and ½ teaspoon baking soda. Add the dry milk and soda to the dry ingredients and prepare your recipe as usual. It also recommends that your baking will be done sooner, so check 7-10 minutes earlier than your recipe calls for.
In any recipe for cookies, brownies etc. it suggests that for every one cup SPLENDA add ½ teaspoon soda, and continue with your recipe. It also suggests that with muffins or quick breads you may add honey or molasses and it will add flavor and moistness. You can also add cinnamon, vanilla or almond extract to give extra flavor. Also these will also be baked in shorter time so check frequently. I have tried the Peanut Butter Cookie recipe that was included on the web site. This recipe was easy to prepare as they stated it would take 20 minutes and that was about right. It said it made 48, but mine came to 53 small tea size cookies. The flavor and texture was excellent.
MY EXPERIMENTS
Other suggestions are for using SPLENDA as a sweetener such as in sauces, puddings dressings etc. I have not tried making puddings with SPLENDA but have made sauces, dips and salad dressings to give these recipes a sweet taste. I also have to watch my salt intake and use the lite salt whenever I use salt in my recipes. I will list some of my recipes here that help me cutting sugar as well as salt.
HORSERADISH SAUCE
½-Cup Mayonnaise
½-Cup Sour Cream
2-packets SPLENDA
2-cloves garlic-minced
1-Tablespoon onion-diced
2-Tablespoon horseradish
½-teaspoon dill week
½-teaspoon celery seed
½-teaspoon parsley flakes
1-teaspoon Mrs. Dash seasoning
Blend all ingredients in a bowl and store in a glass jar with lid and refrigerate. This serves well with meat, fish and vegetables.
I even use this to brush on fish, then dip in crumbs and lightly fry in olive oil. I put this small jar on my table at every meal and use it to season my food instead of salt and pepper. This also works good as a dip for cauliflower, broccoli, and pork rinds or as stuffing for celery, fill two ribs of celery with sauce press them together and slice rounds for a snack tray.
BALSAMIC SALAD DRESSING
1-Cup Balsamic vinegar
2-packets SPLENDA
1-large clove garlic, minced
2-tablespoon diced onion
½-teaspoon Mrs. Dash seasonings
½-teaspoon dill weed
½-teaspoon basil
½-teaspoon Italian seasonings
¼-cup Olive Oil
Place all ingredients in salad cruet in order listed, close and shake to blend dressing. Shake before using. My Favorite salad to use this dressing is with Spinach, sliced red onions and strawberries. I shake on this dressing and enjoy a good addition to my meal.
Another Favorite Fruit Salad is to arrange on a lettuce leaf, grapefruit and orange sections, with sliced bananas and white grapes. I drizzle the following poppy seed dressing over all and top with a few slices of strawberries.
POPPY SEED DRESSING
½-Cup SPLENDA
1/2-teaspoon cornstarch
2-tablespoon poppy seeds
1/2-cup apple cider vinegar
¼-cup olive oil
Add small amount of vinegar with dry ingredients to blend, add remaining vinegar and place in Microwave and cook for a few minutes. Stop and stir to blend until thickened, pour in small jar and add olive oil. Shake to blend and store in refrigerator. Spoon dressing over fruit on your salad plate.
